CHOCOLATE PEPPERMINT OAT BITES

Where are all my thin mint fans at?! If that’s you, then I think you’ll love these! The chocolate and peppermint combo is one of my all time favorites, and since I could eat a million thin mints at a time, I decided I would make a healthier version.

 

These oat bites are great for snacking and are a great option for when your sweet tooth strikes! They’re made with simple ingredients and are free of refined sugar. You can enjoy a few at a time or even freeze them for later. I hope you enjoy these as much as I do!

 

CHOCOLATE PEPPERMINT OAT BITES

Makes ~14-16 bites

Equipment Needed:

blender or food processor

silicon spatula

measuring cups

measuring spoons

 

Ingredients:

8 pitted medjool dates (soaked in water for at least 1 hour then drained)

1.5 cups rolled oats

2 tbsp unsweetened cocoa powder

¼ tsp peppermint extract

 

Instructions:

1. In a blender or food processor, add in rolled oats, cocoa powder and peppermint extract and lightly pulse until mixed (don’t over blend).

2. Add in dates and pulse/blend until you reach a sticky consistency. Use a spatula to wipe down sides throughout.

3. Roll into 1 tbsp sized balls, should make approximately 14-16 bites.

4. Store in an airtight container in the fridge. Can also freeze for later used.
